Consumer Services routinely inspects eggs in accordance with the United States Department of Agriculture standards for consumer grades. All eggs sold or offered for sale must be graded and properly labeled as to size and quality. This inspection is performed by a method known as “egg candling.” The inspectors look at the grade and quality of the egg while also looking for cracks leaks, and dirt.
